Stuffed Sweet Potato Skins


How often do you eat sweet potatoes for breakfast? This delicious Paleo breakfast is filling, nutritious and can be prepared in advance. This recipe makes breakfast for 2.

Ingredients:

  • 2 Medium sweet potatoes-TIP: bake ahead of time. 
  • 4 eggs
  • 1 pound of GROUND breakfast sausage (not the link kind). Use 1/2 pound for this recipe, and refrigerate or freeze the rest.
  • 1/4 cup chopped chives or green onions
  • 1 TBSP coconut oil
  • Salt and pepper to taste

Directions:

Bake sweet potatoes until soft all the way through. 
While potatoes are baking, cook ground breakfast sausage in a skillet until done. Set aside.

Heat oil in a skillet on medium. Crack eggs into a small bowl and scramble them. Add salt and pepper, then cook int the pan.  Add 1/2 of the cooked sausage.

Cut the potatoes in half long ways. Scoop out some of the inside of them. Fill with the egg) sausage mixture and bake for 20 mins. Take out and garnish with chives and drizzle some paleo ranch on top. Enjoy!
