Paleo Almond Orange Blueberry Muffin


There are a lot of great options for brunch, including this tasty blueberry muffin recipe. I love how simple, nutritious, and flavorful this bread is. Enjoy!

Ingredients:

  • 1 cup Blanched almond flour
  • ⅛ teaspoon baking soda
  • pinch of salt
  • 2 tablespoons honey
  • ½ cup canned coconut milk
  • 2 tablespoons coconut oil melted
  • 1 egg, room temperature
  • 1 teaspoon vanilla
  • ½ tablespoon orange zest
  • ¼ cup fresh blueberries (frozen blueberries will not work)

Directions:

Preheat oven to 350 degrees Fahrenheit. 

Melt the coconut oil slowly on low heat. Set aside.

Mix together all dry ingredients until well incorporated. Add the wet ingredients and mix well with a spoon. 

Add the blueberries in last and just stir to incorporate. Drop batter into muffin cups about 3/4 full.  Bake at 350 for 20-25 mins until toothpick comes out clean.
