Bacon Omelet Cups
Who doesn’t love a diet and meal plan that includes eggs and bacon? I love that there are Paleo compliant options for bacon, including ones cured without sugar. If you don’t have access to one of those options, don’t stress, just enjoy some gluten free bacon and call it good.
- 1lb. pack of bacon
- 8 eggs
- ½ green pepper, diced
- ½ yellow onion, diced
- 1 TBSP of onion powder
- ½ TBSP of garlic powder
- Hand full of chives or green onion
- Salt and pepper to taste
Preheat oven to 350 degrees Fahrenheit.
Dice the peppers, onions and green onions. Set aside.
Coat the muffin pan with a thin layer of your choice of cooking oil.
Cut bacon slices in half. Line muffin tin with bacon. In a bowl whisk eggs with seasonings.
Pour equal amounts of egg mixture into each muffin space in the muffin pan. Top each with chives or onions.
Cook 15-20 minutes until the eggs are cooked through.
Tip: For crispier bacon cook the bacon in the tin for 10 mins before you pour in the eggs.
