So it may be the sugar detox talking (I know, again). But I’m sure that last night I made the BEST Paleo Banana Bread possible. Since I haven’t shared the recipe yet, I thought it was a good time to do it. I hope you enjoy!
1/4 c Unsweetened Applesauce
1/4 c Avocado Oil
2 Very Ripe Bananas
2 TBSP Raw Honey
3/4 c Coconut Flour
1 tsp Baking Powder
1/2 tsp Himalayan Pink Salt (Use Sea Salt as a substitute)
Preheat oven to 350 degrees Fahrenheit.
Line muffin pan with 12 paper muffin cups.
Mix wet ingredients, including the banana, in a bowl with a mixer on med-high until very well mixed. There may be a few small chunks of banana, but this is ok. Add dry ingredients, then mix on low speed until clumps are gone.
Spoon batter into muffin cups equally and bake in the oven for 15-17 minutes to start. Add time in 3 minute increments until the tops are light golden brown, and a toothpick comes out clean.
Serve topped with coconut oil, honey, or plain.
These are amazing, and I’m pretty sure I ate half of the batch.
