I’m not one of those people who likes pumpkin spice everything. I don’t drink coffee or lattes, I don’t want pumpkin spice on my potato chips, and I definitely would never eat pumpkin spice Cheerios. Blech.
However, when it comes to dessert, I have grown to love pumpkin pie. We had extra avocado left over from making Paleo chocolate avocado pudding, and I had a craving for pumpkin pie. I thought hmmm, what if I could use the extra avocado, and some other pumpkin pie ingredients to make a pudding or mousse.
It was everything I imagined it would be. The thing that surprised me most was how much my two kids, and husband loved it. My 19 month old was seriously upset when the bowl was empty, and my 5 year old asked me to make it again sometime.
Ignore the fact that the combination of food colors resembles baby poop, and you’ll thoroughly enjoy this delicious Paleo treat.
1-14oz can Pumpkin (plain, no added spices)
2 TBSP Cinnamon
2 TBSP Pumpkin Pie Spice
1/8 tsp Sea Salt
3/4 c Maple Syrup
Cut open avocado and scoop the green flesh into a medium mixing bowl.
Add all ingredients. Mix with an immersion blender until it’s a creamy, pudding-like consistency, with no avocado chunks.
Serve in bowls. (Or eat from mixing bowl)
*I like a lot of cinnamon, and would probably add more than 2 TBSP. Once the pudding is mixed, you can adjust to add more if you’d like.
**Our first trial of this, the avocado wasn’t as ripe as it looked on the outside. A softer avocado will yield a more creamy pudding.
***If you don’t have an immersion blender, mix the ingredients in a food processor or blender. A hand mixer might work on high-speed if the avocado is ripe and soft enough.
****We thought this would make a great filling for an icebox Paleo pumpkin pie.
